All our food is freshly prepared, using local Welsh produce where available, and dishes are served in the informal atmosphere of our bar or terrace room. Vegetarians are well catered for. We are well-known for our meals so please come early at busy times. We are also happy to cater for functions and special events - please ring to discuss your individual requirements.

Head-chef Simon Hough's Philosophy
Head Chef Simon Hough is passionate about good food, and has worked with some of the most famous names in the restaurant world. Here he talks about his approach to food and how he helps make the Bryn Tyrch a special place to eat.
Becoming a chef
"Originally I trained to be a pastry chef, but always found myself wandering over to the stoves where the main courses were cooked: At the tender age of 16 hot food excited me far more than early mornings! It gradually became apparent that my true love was to be working with meat, fish and vegetables rather than with flour and eggs. I worked in a small classic French restaurant where everything was home-made from fresh. I've worked for Raymond Blanc, at Chez Nico's and at Gordon Ramsey's flagship restaurant on Royal Hospital Road."
Creating dishes and menus
"You have to think about what's fresh. Keeping it fresh, simple, seasonal, tasty and well-presented is a must for me. Take a good cut of meat, let's say local lamb. Cook some potatoes in stock and layer in some vegetables which complement lamb, say leek and parsnips. Delicious."
Suppliers and produce
"I believe any good chef should enjoy a great rapport with their suppliers; give them a little and they give you a lot. My kitchen works tightly with the seasons, keeping dishes fresh and suppliers on their toes. I always try to use local produce, including sourcing fish from local coastal grounds."
Good food at the Bryn Tyrch
"Everything that goes out of my kitchen has to be home-made, fresh and of good honest quality and value. Using local produce and including Welsh themes adds to the authenticity of the dishes and gives our guests a great dining experience. After all Wales has a great wealth of produce to offer any enthusiastic chef."
